Furikake is a Japanese seasoning sprinkled over rice or mixed into onigiri. This simple homemade version uses dried wakame, sesame seeds, sesame oil, and soy sauce for a savoury, nutty flavour.
Makes: Enough for 3–4 onigiri

Ingredients
- 3 tbsp dried wakame
- 2 tbsp toasted white sesame seeds
- ½ tbsp sesame oil
- ½ tbsp soy sauce
- Daikon leaves, turnip greens, or other leafy greens (optional)
- Sugar and salt, to taste
If you add leafy greens, add the seasonings little by little and adjust to taste.
Instructions
- Crush the dried wakame into small flakes using a fork or food processor. Do not over-process.
- Finely chop the leafy greens, if using.
- Sauté the wakame and greens over low to medium heat for about 1 minute, until fragrant.
- Add the sesame oil and soy sauce. Add a little sugar if you prefer a sweeter flavour.
- Stir in the toasted sesame seeds.
- Taste and add salt if needed.
Mix the furikake with rice for onigiri, or sprinkle it over a warm bowl of rice.

Tip
Avoid crushing dried wakame in a zip-top bag—the sharp pieces can make tiny holes. A container and fork work much better.
