Plant-Based Hiyashi Chuka (Japanese Chilled Ramen)

Hiyashi Chuka is one of Japan’s most popular summer noodle dishes. Chilled ramen noodles are topped with colourful vegetables and served with a refreshing sweet-and-sour sesame sauce.

Ingredients

Noodles

  • 2 servings ramen noodles

Toppings

  • Cucumber
  • Tomato
  • Lettuce
  • Edamame
  • Any other vegetables you like

Sauce

  • 2 tbsp soy sauce
  • 2 tbsp sugar
  • 3 tbsp rice vinegar
  • 1 tbsp sesame oil

Depending on the soy sauce you use, add a little more to taste.

Instructions

  1. Cook the ramen noodles according to the package instructions.
  2. While the noodles are cooking, prepare your favourite vegetables.
  3. Mix the soy sauce, rice vinegar, sugar, and sesame oil until the sugar dissolves.
  4. Drain the noodles, rinse briefly under running water, then rinse well in cold water until completely chilled.
  5. Top with the vegetables, pour over the sauce, and enjoy.

Tips

  • You do not need a large amount of ice. Rinsing the noodles thoroughly in cold water will chill them well.
  • Add plenty of toasted white sesame seeds to the sauce for extra flavour.
  • Convenience-store Hiyashi Chuka in Japan may contain animal ingredients in the sauce or toppings, so check the label if you are vegan.
