Hiyashi Chuka is one of Japan’s most popular summer noodle dishes. Chilled ramen noodles are topped with colourful vegetables and served with a refreshing sweet-and-sour sesame sauce.

Ingredients
Noodles
- 2 servings ramen noodles
Toppings
- Cucumber
- Tomato
- Lettuce
- Edamame
- Any other vegetables you like
Sauce
- 2 tbsp soy sauce
- 2 tbsp sugar
- 3 tbsp rice vinegar
- 1 tbsp sesame oil
Depending on the soy sauce you use, add a little more to taste.
Instructions
- Cook the ramen noodles according to the package instructions.
- While the noodles are cooking, prepare your favourite vegetables.
- Mix the soy sauce, rice vinegar, sugar, and sesame oil until the sugar dissolves.
- Drain the noodles, rinse briefly under running water, then rinse well in cold water until completely chilled.
- Top with the vegetables, pour over the sauce, and enjoy.

Tips
- You do not need a large amount of ice. Rinsing the noodles thoroughly in cold water will chill them well.
- Add plenty of toasted white sesame seeds to the sauce for extra flavour.
- Convenience-store Hiyashi Chuka in Japan may contain animal ingredients in the sauce or toppings, so check the label if you are vegan.
