Instructions 

  1. Cut the vegetables into desired sizes.
  2. In a pot, add water and the vegetables.
  3. When the vegetables are tender, turn off the heat and add the curry roux
  4. Once the curry roux has dissolved, return the pot to low heat.
  5. When the curry thickens slightly, turn off the heat.
  6. Add the potato starch mixture and mix well.
  7. Pour the curry over boiled udon noodles and serve!

If using leftover curry:
👉Substitute 150-200mg of curry for the curry powder. Then add the potato starch mixture for a thick and delicious curry sauce!
