Konnyaku stir fry

Konnyaku is a chewy, low-calorie Japanese food made from the konjac root. In this stir fry, it’s cooked with sesame oil, soy sauce, mirin, a little sugar, and spicy doubanjiang for heat. Topped with sesame seeds and green onions, it’s a healthy dish that’s full of flavor and texture.

Ingredients

• 1 block konnyaku (about 250g)
• 1 tbsp sesame oil
• 1.5 tbsp soy sauce
• 1 tbsp mirin
• 1 tsp sugar (or beet sugar, optional)
• 1 tsp doubanjiang (adjust for spice)
• White sesame seeds (for topping)
• Chopped green onion (optional)

Note: I skipped garlic and ginger in this video because my sister doesn’t eat them.

Instructions 

1. Cut the konnyaku into twisted tazuna shapes (or tear with a spoon for more texture).
2. Boil for about 1 minute to remove the smell.
3. Heat sesame oil and fry konnyaku over medium heat until browned and water is gone.
4. Add soy sauce, mirin, sugar, and doubanjiang. Stir to coat.
5. Turn off the heat. Top with sesame seeds and green onions.

Point 

  • Use the “tazuna” cut for konnyaku: cut into strips, make a slit, twist one end through.The ribbon shape looks pretty and helps flavors soak in.
