Sanshoku Don is a Japanese dish with three colorful toppings over rice. Traditionally, it includes scrambled eggs, seasoned ground meat, and boiled green vegetables. In this vegan version, soy meat and tofu are used instead. It’s a nutritious and vibrant meal, popular for bento or home-cooked dishes.

Ingredients and Instructions
① Soy Meat Soboro
- Dried soy meat (25g)
- Soy sauce (1/2 tbsp)
- Mirin (1/2 tbsp)
- Sugar (1/2 tsp)
- Sesame oil (1/2 tsp)
- Dashi (or water, 50ml)
- Rehydrate the soy meat by soaking it in water, then drain well.
- Heat sesame oil in a frying pan, add the soy meat, and lightly sauté it.
- Add soy sauce, mirin, sugar, and dashi (or water), and mix well.
- Cook over medium heat until the liquid evaporates and the mixture becomes crumbly, like ground meat.
② Tofu Turmeric Scramble
- 1/4 block of silken tofu (about 100g)
- 1/2 tsp turmeric
- A pinch of black pepper
- A pinch of salt
- Drain the tofu slightly and crumble it with your hands.
- Heat a frying pan over medium heat and add the crumbled tofu.
- Once the tofu starts to cook, add the turmeric, black pepper, and salt, and mix well.
- Cook over medium heat, stirring, until the tofu has a scrambled egg-like texture.
- Once fully cooked, remove from heat
③ Spinach with Sesame Oil
- 1 bunch of spinach (about 100g)
- 1 tsp sesame oil
- 1 tsp soy sauce
- A pinch of salt
- 1 tsp ground sesame seeds (white or black)
- Wash the spinach and blanch it briefly in boiling water. Then, cool it under cold water and squeeze out excess moisture.
- Cut the spinach into bite-sized pieces.
- In a bowl, combine the sesame oil, soy sauce, and salt. Mix well.
- Add the spinach to the bowl and toss everything together.
- Finally, sprinkle the ground sesame seeds and toss again.
