Shiratama Zenzai is a traditional Japanese dessert made with soft rice flour dumplings (shiratama) served in a warm or chilled sweet red bean soup.

Ingredients
- Adzuki beans: 100g
- Water: 400ml (for first boiling) + 600ml (for simmering)
- Sugar: 50-70g (adjust to taste)
- Salt: a pinch
- (Shiratama Dumplings (8-10 dumplings ))
- Shiratama flour: 50g
- Water: 50ml (adjust as needed)
Instructions
①Cook the Adzuki Beans
- Rinse the adzuki beans and put them in a pot with 400ml of water
- Boil for 5 minutes, then drain the water (to remove bitterness)
- Add 600ml of fresh water and simmer on low heat for 40-50 minutes
- Add more water if needed
- Check if the beans are soft enough to mash with your fingers
- Add sugar in two parts and cook for 10 more minutes
- Add a pinch of salt and turn off the heat
②Make the Shiratama Dumplings
- Put shiratama flour in a bowl and slowly add water while kneading
- When the dough feels soft like an earlobe, roll it into 10 small balls
- Boil water in a pot and add the dumplings
- When they float, cook for 1 more minute, then transfer to cold water
③Final Touch
- Put the warm sweet red bean soup in a bowl and add the dumplings
- Add candied chestnuts or grilled mochi if you like
- Enjoy warm or chilled 😊
