Vegan Ginger Pork(Plant-based Shogayaki)

Shogayaki (生姜焼き) is a beloved Japanese home-style dish, usually made with thinly sliced pork and a sweet-savory ginger sauce.In this vegan version, we use soy meat to recreate the same juicy texture and rich flavor—completely plant-based and just as satisfying!

Ingredients(Serves 2)

If using dried soy meat, rehydrate it in hot water first and squeeze out excess water before cooking.

Instructions 

  1. Marinate the soy meat with soy sauce and salt & pepper.
  2. Lightly coat the soy meat with flour (potato starch or cornstarch also works).
  3. In a bowl, mix soy sauce, mirin, and grated ginger to make the sauce.
  4. Heat oil in a pan, sauté the onions until soft, then add the soy meat.
  5. Pour in the sauce and stir-fry until everything is coated and glossy.
  6. Finish with julienned ginger for extra aroma.
